The Tuscan ragu dish ($24) at Sage Restaurant in Fair Lawn runs as a special only because it sells out so quickly, and it takes time to prepare, said owner-manager Rob DeLaurentis. Introduced by his business partner and chef, Lou DiMauro, about six months ago, it is made with shredded beef short ribs and pork shoulder, then slow-cooked in tomato sauce and served over fresh rigatoni pasta and topped with ricotta cheese and shredded aged provolone.

“It’s a really hearty dish and feels home-cooked,” DeLaurentis said.
