Lou DiMauro, chef and co-owner of Sage, an American restaurant with Italian flair, has been working in a kitchen since he graduated from high school. Was he the kind of kid who just loved to cook from an early age?

“Not really,” answers the “happily divorced with no kids” Franklin Lakes resident. He just needed a job and landed one — as a dishwasher — in the cafeteria of Bergen Community College. He went on to prepping food. The chef at the college offered to write a letter of recommendation to the prestigious Culinary Institute of America on his behalf, “and that’s how it all started,” he said.
